Abstract:
Detection of spoilage in raw food supplies is an important objective for health inspectors and consumers likewise, since 1 in 3 people has suffered from food poisoning. Spoiled foods are difficult to identify, especially if the consumer has no objective means of analysis. In this respect, we propose an electrochemical evaluation sensor, which measures the histamine level in raw meat. Several screen printed electrodes were modified with biopolymer-graphene layers. The sensitive layers were deposited via physico-chemical methods: electrochemical, dropcast, chemical bond and plasma polymerization. The as obtained sensors were investigated by electrochemical means to different concentrations of histamine. The plasma polymerization technique exhibited a more sensitive response due to the thin layer of sensitive material. All the sensors indicated a low detection limit and reproducible responses.
