Abstract:
Astacus leptodactylus Esch. is a native species of freshwater crayfish which, together with closed relatives A. astacus and A. torentis, inhabits almost all springs and rivers of Europe, North Africa, and Western Asia. As in the case of other aquatic animals, crayfishes are vectors of some pathogenic germs, therefore, an appropriate method to sterilize crayfish meat without significantly affecting the culinary qualities should be routinely used. Irradiation with high energy gamma rays or electrons is presented as the unique method which could be used to decontaminate raw food without unwanted effects on savour and texture. However, due to the high energy of the radiation, the concentration of the free radicals increase or new species are produced in irradiated freshwater crayfish. Using EPR spectroscopy we have investigated the thermal stability and the dose dependence of the free radicals in irradiated Astacus leptodactylus.
