Abstract: Freshness is an important characteristic of the food we eat. Spoiled food causes poisoning and, if left untreated, even death. Several biogenic amines have been related to the spoilage of food products, but histamine has been identified as the most important one. In EU, the caution level for histamine is 50 ppm, while the maximum accepted level is 200 ppm. The present paper focuses on the fabrication of a screen-printed microsensor for the rapid evaluation of histamine. The sensor is based on metalloporphyrins, chemically bond to the carbonic substrate. The structural and morphological characterization has been performed with Raman spectroscopy and AFM, while the electrochemical investigations have been performed with cyclic voltammetry. Using a weak acid as a mediator for the electron transfer between histamine and metalloporphyrins, a fast response time and a high sensitivity were achieved.
