Abstract: In the last decade the issues for public health and hygiene regarding food processing, packaging, transportation, storing and distribution become more significant. Due to improper food handling the incidence of food-borne diseases is increasing globally. Thus, simple fast systems are needed for detecting changes that may occur in food along the supply chain, from the producer to consumer. For this, firstly, this paper there are studied the main food-borne pathogens (bacteria, viruses, moulds and yeasts).This study highlighted the main factors that lead to the emergence, incubation period, development of the toxigenic compounds, chemical and physical transformations on food, methods of combat and usual methods of detecting them. A future study will be necessary to determine the main characteristics that are needed by the multi-spectral platform for detecting the degree of freshness of food in order to develop new and innovative methods of detecting food-borne pathogens.
