Abstract: The presence of histamine due to uncontrolled microbial growth renders the food unsuitable for human consumption. An electrochemical metalloporphyrin-based sensor which is able to evaluate the level of histamine is essential for signaling the early onset of spoilage. We developed an electrochemical sensor based on three metalloporphyrin’s in order to evaluate the sensitivity and selectivity towards histamine detection, in the presence of trichloroacetic acid, used as reaction mediator. The calculated limit of detection for histamine was 0.19 ppm. Cyclic voltammetry was used for the characterization of the sensor and the reaction was modeled using Hyperchem® program.
